If you follow us on instagram, you know we made some old school popcorn garland for our this weekend. Apparently having left over popcorn translates to a popcorn recipe. White chocolate peppermint popcorn to be exact.
I recruited Ramona to make the popcorn. Mainly because it was part of her teachers’ gifts, but also it was a great excuse to use her elf on the shelf chef set. Lowell van Winterbottom, our elf, conveniently showed up in his apron and hat ready for some Christmassy popcorn.
Ramona wanted to be in charge of photos with my phone more than she wanted to actually cook. Being the child of a blogger is hard. At least we are teaching her the important things in life…like taking process photos.

You basically only need 3 ingredients: popcorn, white chocolate chips, and peppermints.
We air popped our kernels because fresh popcorn is delicious. You can pop it in the pot too. Sprinkle some salt on your freshly popped corn.
Crush the peppermints in a food processor. They become glorious peppermint sand.
Melt your chocolate. I used the microwave. A cup of chocolate chips microwaved at 50% power for 1 minute 40 seconds. Bam melted. White chocolate chips stay in their chip shape until you stir them. Don’t let them fool you into thinking they aren’t melted.
Scoop your melted chocolate onto your popcorn. It’s easier to make it in smaller potions to ensure chocolatey goodness is evenly spread on your popcorn. Make it look gooey. (Technical food recipe jargon being thrown around here.) Sprinkle your peppermint sand while you stir.
I laid the coated popcorn on the parchment covered counter to let the chocolate set. Then gave it another sprinkle of peppermint.
Once the chocolate is set- about 30 minutes- break it up and eat it up. Or in this case package with a gift card for your kids’ teachers.

While you can adjust your chocolate and peppermint levels to taste, I used 1 cup of popcorn kernels, 2 bags of white chocolate chips, and a bag of peppermints. I am already dreaming of what to use my leftover peppermint sand for. Did someone say hot chocolate? Because Christmas.

This is a great (and seems pretty easy) gift for teachers! I’ll have to remember this next year. Right now we’re in the middle of a cookie-making frenzy, and popcorn sounds so much simpler. P.S. Have you reserved a URL for Ramona’s future blog yet? 😉
I would have made cookies, but that’s takes more skills than popcorn. That’s more in Nick’s department than mine! I haven’t reserved her URL yet. I should ask her what she wants her blog name to be just to write it down and laugh about it later!

Haha she’s actually helpful now. There’s a stage where they want to help but it’s kind of a hassle for you. Then there’s this stage where they can actually do things like get ingredients from the pantry and what not. It makes it really nice. You are going to have so much fun with 2. I can’t wait to see all the popcorn making and cookie baking in your future!
